Avocado Cheese Toast with Salsa

This simple combination of mashed avocado mixed with grated Cheddar tastes fantastic – spread it onto wholemeal toast, grill until melted, then serve with a lively salsa.


Serves 2 / Prep time: 10 minutes / Cook time: 5 minutes


2 slices wholemeal bread

1 large ripe avocado, halved, pitted and peeled

75g mature or medium Cheddar, grated

1 small red onion, finely chopped

1 tomato, finely chopped

5cm piece cucumber, finely chopped

1 tsp lemon juice or vinegar

Freshly ground black pepper




1 Preheat the grill. Lightly toast the slices of bread.

2 Mash the avocado with a fork, mix in the grated Cheddar and season with black pepper. Spread over the slices of toast. Grill for 3-4 minutes until melted and beginning to brown.

3 Meanwhile, mix together the onion, tomato and cucumber. Season with the lemon juice or vinegar and a little black pepper. Serve with the avocado cheese toasts.

Cook’s tips: Another time, make the recipe with grated Red Leicester or crumbled Lancashire cheese. If you like, add some chopped fresh coriander to the salsa, or a little chopped fresh chilli.

For an interesting canapé, make mini versions on toasted slices of French bread, topped with spoonfuls of the salsa.
