Favourite Pitta Pizzas

These yummy pitta pizzas only take a few minutes to make. They’re perfect for a healthy light lunch or snack. Kids love them too – they’re perfect for when they come home from school – ravenous!


Serves 4 / Prep time: 5 minutes / Cook time: 5 minutes


4 wholemeal pittas

4 tsp tomato puree

80g mature Cheddar cheese, grated

4 tomatoes, sliced

2 tsp dried mixed Italian herbs

Freshly ground black pepper

Basil or rocket leaves, to serve



1 Preheat the grill.

2 Arrange the pittas on a baking sheet. Spread the surface of each one with 1 tsp tomato puree, then share some of the cheese between them. Arrange the tomatoes on top and sprinkle with the herbs and the remaining cheese. Season with black pepper.

3 Grill for 4-5 minutes until the cheese melts and bubbles. Serve, scattered with a few basil or rocket leaves.

Cook’s tips: If you prefer, bake the pitta pizzas for 8-10 minutes at 200°C, fan oven 180°C, Gas Mark 6. Make your own variations, such as ham and pineapple with Cheshire cheese, or add some sliced pepperoni sausage.
